Air fryer roasted spiced aubergine

Background
I use my air fryer to roast vegetables - it’s easier, quicker and cheaper than using an oven, particularly when I don’t need to cook a lot of dishes. For example this air fryer roasted spiced aubergine was ready in just 15 minutes - perfect addition for salads, wraps, stews or you can serve it as a snack or appetizer with tahini or chilli sauce as part of a mezze.
Ingredients
- 1 medium aubergine
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar or lemon juice
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp black cumin seeds
- Salt & pepper
Instructions
- Cut the aubergine into bite-sized pieces.
- In a bowl, combine the oil, vinegar/lemon juice and spices. Add the aubergine pieces and toss well.
- Marinate for 10 minutes or so.
- Put them in the air-fryer basket, lined with parchments paper (or a silicon basket) and set the machine to roast.
- Roast for 15 minutes at 190C.
- Let it cool and serve at room temperature with dips or part of salads, stews, sandwiches, mezze etc.
