Almond oat bars with strawberry

Background
This almond oat bars with strawberry is vegan and gluten-free, if appropriate oats are used. Furthermore, it’s sugar-free, oil-free, dairy-free, as the sweetness is provided by the fruits and the almond & bananas make the cake moist and soft. So this is a healthy snack that you can enjoy guilt-free during the day.
Ingredients
- 3 ripe bananas
- 1 cup rolled oats (gluten-free, if needed)
- ½ cup ground almonds
- 1 tsp baking powder
- ½ tsp vanilla essence
- 3 Tbsp almond butter
- 1 cup chopped fresh strawberries
Instructions
- Preheat the oven to 180°C. Grease and line a shallow, about 20x30 cm,baking dish.
- In a food processor, blend the bananas, oil, vanilla essence and almond butter.
- Add the ground almond, baking powder and oats, then pulse again for a few seconds.
- Transfer the mixture into the prepared dish, then add the strawberries and push them into the batter while spreading it out evenly in the dish.
- Bake for 20-25 minutes until golden.
- Let it to cool, then cut it up into slices.
