Anchovy and tomato crostini

Background
These anchovy, tomato & mozzarella crostini are classic Italian antipasti. They are perfect nibbles for parties or appetizers in a dinner menu - I even love them as afternoon snacks!
Ingredients
- 1 ciabatta or baguette
- 4-6 medium tomatoes, thinly sliced
- 1 pack of mozzarella cheese, drained and thinly sliced
- Tinned or jar of anchovies
- basil leaves
Instructions
- Heat the grill.
- Slice the bread about 1-1.5 cm thick. Lightly toast or grill on both sides.
- Rub them with garlic and brush with some of the drained anchovy oil.
- Put two slices of tomato on each toast, add 1 anchovy fillet, then 1 slice of mozzarella.
- Place the crostini on baking sheet and grill for about 5 minutes or until the cheese is melted.
- Serve warm, garnished with basil leaves.
