Background

These anchovy, tomato & mozzarella crostini are classic Italian antipasti. They are perfect nibbles for parties or appetizers in a dinner menu - I even love them as afternoon snacks!

Ingredients

1 ciabatta or baguette
4-6 medium tomatoes, thinly sliced
1 pack of mozzarella cheese, drained and thinly sliced
Tinned or jar of anchovies
basil leaves

Instructions

Heat the grill.
Slice the bread about 1-1.5 cm thick. Lightly toast or grill on both sides.
Rub them with garlic and brush with some of the drained anchovy oil.
Put two slices of tomato on each toast, add 1 anchovy fillet, then 1 slice of mozzarella.
Place the crostini on baking sheet and grill for about 5 minutes or until the cheese is melted.
Serve warm, garnished with basil leaves.
