Marinated tofu bites
Background
These easy marinated tofu bites are a great way to add extra plant-based protein and flavour to everyday meals. Firm tofu is coated in a creamy yoghurt marinade flavoured with smoked paprika, oregano, cumin and garlic, then baked or air-fried until golden around the edges. They are quick to prepare and make a useful addition to salads, grain bowls, soups, broths and stews, or can simply be served with your favourite side dishes. For a vegan version, use unsweetened soy yoghurt instead of Greek yoghurt. The tofu bites are best served warm or at room temperature and can be prepared ahead for easy lunches and meal prep.
Ingredients
- 1 block firm tofu (300g)
- ½ cup Greek yoghurt
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- ½ tsp ground cumin
- 1 garlic clove, minced
- Salt and freshly ground black pepper, to taste
Instructions
- If using the oven, preheat it to 190°C and line a baking sheet with baking parchment.
- In a large bowl, whisk together the Greek yoghurt, olive oil, minced garlic, smoked paprika, oregano, cumin, salt and black pepper until smooth.
- Drain the tofu and pat it dry with kitchen paper. Cut it into bite-sized cubes, add them to the bowl and gently toss until evenly coated in the marinade.
- Arrange the tofu in a single layer on the prepared baking sheet. Alternatively, place the tofu in a silicone basket suitable for an air fryer.
- Bake or air-fry for 15–20 minutes, or until golden around the edges, turning or tossing the tofu once or twice during cooking so that it browns evenly.
- Serve warm or at room temperature in salads, soups, stews and wraps, or alongside your favourite side dishes.
