Apple and ginger oat bar

Background
This apple and ginger oat bar is vegan and gluten-free, if appropriate oats are used. Itβs also sugar-free and has little oil, which can be omitted if you add half a cup of ground nuts (walnuts or pecans would work well!). These are lovely snacks during the day or with your morning coffee or afternoon tea.
Ingredients
- 2 ripe bananas
- 1.5 cups rolled oats (gluten-free, if needed)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 apples, grated
- 1 tsp ginger powder
- 1/2 cup raisins (optional)
- 2 Tbsp vegetable cup oil
Instructions
- Preheat the oven to 180Β°C. Grease and line a shallow, about 20x30 cm, baking dish.
- Using a fork, mash the bananas, then mix in the vanilla essence, cinnamon, ginger and oil.
- Add the oats, then combine well.
- Add the grated apple and mix well. Fold in the raisins, if used.
- Transfer the mixture to the prepared dish, spreading it out evenly.
- Bake for 20-25 minutes until golden.
- Take the tin out of the oven and let it cool for a few minutes, then transfer the cake to a wire rack.
- When itβs completely cool, cut it into squares or bars.
