Apple and oat pancakes

Background
These apple and oat pancakes are dairy-free and gluten-free if appropriate oats are used. They are redy in just 15 minutes, perfect for breakfast, brunch or snacks.~
Ingredients
- 1 apple, peeled and grated
- 1 cup oats (gluten-free, if needed)
- 1 large egg
- Β½ cup ground almond
- 1 cup oat milk
- Β½ tsp cinnamon
- 1 tsp baking powder
- 2 Tbsp coconut sugar
Instructions
- Put all ingredients in a blender and pulse until you get a thick, textured batter. Add more oat milk if it's too thick.
- If you have time, rest the batter for 15-30 minutes.
- Oil a pancake pan or a heavy-based frying pan, then drop spoonfuls of batter into the pan, creating round shapes (5-6 cm). Cook for about 2 minutes on each side until golden, then transfer them to a plate. Repeat with the remaining batter.
- Serve warm or at room temperature.
