Apple, beetroot and feta salad

Background
I love this apple, beetroot and feta salad during the autumn season. It's fresh, zingy, crunchy and super healthy! Most importantly it takes under ten minutes to throw together! Eat it with a slice of wholesome bread, toast or a crusty roll.
Ingredients
- 1 green apple
- 1 red apple
- 300g cooked beets
- 2 celery stalks
- 50g sunflower seeds
- 100g feta cheese
- 2 Tbsp olive oil
- 1 Tbsp cider vinegar
- ½ tsp grain mustard
- 1 tsp honey
Instructions
- Make the dressing: mix the oil, vinegar, mustard and honey. Set aside.
- Dry-fry the sunflower seeds slightly. Set aside.
- Core the apples then slice into thin wedges. Cut the beets into thin slices. Finely slice the celery thinly.
- In a serving dish arrange the apples, beets, celery slices then sprinkle the toasted sunflower seeds over them and crumble the feta on top.
- Finely drizzle with the dressing and season to taste.
