Background
This simple apple and radish salad is a perfect condiment to good with the cheese board! It goes particularly well with strong blue cheeses such as Stilton and Roquefort. It's ready in 5 minutes so it's super easy to throw together.
Ingredients
- 2 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 1 Tbsp fresh orange juice
- ½ tsp runny honey
- 1 pinch of salt
- 1 handful of radishes
- 1 apple
- 1 celery stalk
- Parmesan cheese, for serving (optional)
Instructions
- Whisk the lemon & orange juice, honey, salt and oil together in a small bowl. Taste and adjust to your liking.
- Thinly slice the celery and radish. Cut the apple into thin wedges. Put these in a mixing bowl. Pour the dressing over. Toss well.
- Serve with some grated Parmesan cheese scattered on top if you like.
Tips
- You can supplement this salad with a handful of walnuts, lightly toasted.
- You can dice the apple and vegetables, if you like, into 5mm little cubes! This version will be more like a relish.
