Background

This simple apple and radish salad is a perfect condiment to good with the cheese board! It goes particularly well with strong blue cheeses such as Stilton and Roquefort. It's ready in 5 minutes so it's super easy to throw together.

Ingredients

2 Tbsp fresh lemon juice
1 Tbsp olive oil
1 Tbsp fresh orange juice
½ tsp runny honey
1 pinch of salt
1 handful of radishes
1 apple
1 celery stalk
Parmesan cheese, for serving (optional)

Instructions

Whisk the lemon & orange juice, honey, salt and oil together in a small bowl. Taste and adjust to your liking.
Thinly slice the celery and radish. Cut the apple into thin wedges. Put these in a mixing bowl. Pour the dressing over. Toss well.
Serve with some grated Parmesan cheese scattered on top if you like.

Tips

You can supplement this salad with a handful of walnuts, lightly toasted.
You can dice the apple and vegetables, if you like, into 5mm little cubes! This version will be more like a relish.
