Apricot, yoghurt and pistachio pot

Background
This apricot, yoghurt and pistachio pot is a healthy dessert for those who need to look after their weight or for Β the health-conscious. It can be made in just 15 minutes.
Ingredients
- 100g dried apricots
- 100ml freshly squeezed orange juice
- 3 tsp honey or agave nectar
- 100ml Greek yogurt
- 1 Tbsp shelled pistachios
Instructions
- Cut the apricots in half then put them in a saucepan. Add the orange juice and one teaspoon of honey/agave nectar. Cook for about 10 min until the peach becomes soft and you get a thick syrup. Let it cool.
- Roughly chop the pistachios, put aside.
- Divide the apricot mixture between two bowls or glasses then spoon over the yoghurt.
- Scatter with pistachio pieces and drizzle with one spoonful of honey or agave syrup.
Tips
