Background
This Asian carrot and radish salad is perfect as a condiment for burgers, wraps and sandwiches. You can also serve it at barbecues and parties, or take it with you to picnics & trips. This version is not spicy - for a bit of heat add a chilli (de-seeded & chopped).
Ingredients
- 2 carrots
- 5 purple radishes
- 1 Tbsp rice vinegar
- 1 tsp extra-virgin olive oil
- 1 tsp sesame oil
- 1 Tbsp tamari
- 1 tsp honey
- Β½ tsp grated ginger
- 1 garlic, minced
- 2 Tbsp chopped flat leaf parsley leaves
- 1 tsp sesame seeds
Instructions
- Shred or julienne cut the carrots and radishes.
- Whisk the vinegar, oil, tamari, honey, garlic and ginger in a bowl. Add the carrot and radish, then toss well. Season to taste.
- Rest for 15 minutes for the flavours to blend.
- Just before serving add the chopped herbs and sesame seeds.
