Asian style potato and mackerel salad

Background
This Asian-style potato and mackerel salad is a fusion of Japanese and western flavours and ingredients. It’s filling, healthy and easy to make. You can serve it warm or cold, so it’s perfect for parties, picnics and trips.
Ingredients
- 350g new potatoes
- 1 large mackerel fillet
- 1 Tbsp soy sauce
- 1tsp groundnut or other oil
- 1 tsp rice vinegar
- 4 spring onions
- 4 radishes
- 4 cm piece cucumber
- 2 Tbsp chopped coriander leaves
- 1 red chilli or ½ red small Romano pepper
- For the dressing
- 1 Tbsp oil
- 1 tsp sesame oil
- 1 Tbsp rice vinegar
- 2 Tbsp Kikkoman soy sauce
Instructions
- Rub the dirt off the new potatoes, then cook them in lightly salted water until tender for about 10-15 mins.
- Meanwhile, mix the soy sauce, vinegar and oil, then rub the fish with it. Heat a griddle pan and grill the fish for 2-3 minutes on each side. Set aside.
- Finely chop the spring onions and slice the radishes. Cut the cucumber in half, scoop out the soft flesh. Cut the cucumber into small cubes. Cut the pepper or chilli into tiny cubes too.
- Mix the dressing, taste and adjust it to your liking.
- Shred the fish into chunks.
- Drain the cooked potatoes and put them in a mixing bowl. Scatter the chopped vegetables and herbs on top, then pour over most of the dressing. Combine carefully.
- Arrange the fish pieces on top, then drizzle with the remaining dressing. Season with ground pepper.
