Asian-style tofu salad

Background
This Asian-style tofu salad is super-healthy, easy to make and rather delicious! Itβs perfect for lunch or a light supper - you can supplement or substitute the vegetables with shredded carrot, radish or Edamame beans; or blanched green beans, sugar snap peas, mangetout and so on.
Ingredients
- 1 pack hard tofu (approx. 200g)
- 1 small bag of mixed salad (for two)
- Β½ cucumber
- Β½ green bell pepper
- 4 spring onions
- 1 tsp toasted sesame seeds
- For the dressing:
- 2 Tbsp groundnut oil
- 1 Tbsp rice vinegar
- 1 tsp honey
- 1 tsp naturally fermented soy sauce
- ½ tsp toasted sesame oil
- Β½ tsp minced fresh ginger
Instructions
- Make the dressing - whisk the ingredients and set aside.
- Rinse and pat-dry the tofu then cut into 2cm cubes.
- Mix the tofu cubes with one Tbsp of the dressing, marinate for a few minutes.
- Meanwhile, chop the green pepper, cucumber and salad onions then toss with the salad leaves in a large serving bowl.
- Heat a drop of oil in a frying pan. Add the tofu with the marinade and fry for about 10 minutes until golden on each side.
- Add the tofu to the salad, then pour over the dressing and toss.
- Scatter the sesame seeds on top and serve.
