Asparagus and tofu stir-fry

Background
This asparagus and tofu stir-fry is on the table within 15 minutes. It’s vegan, healthy and can be served with noodles or rice. You can add some chilli flakes if you want to spice it up a little.
Ingredients
- 1 block hard tofu (about 350 g )
- 1 Tbsp cornflour or chickpea flour
- 1 Tbsp vegetable oil
- 1 bunch asparagus
- 2 large cloves garlic
- 3 cm piece of ginger
- 1 Tbsp sesame oil
- 2 Tbsp Kikkoman (gluten-free) soy sauce
- 1 Tbsp Sesame seeds
- water
Instructions
- Drain then cube the tofu and toss in your chosen flour.
- Mince the garlic and ginger, then mix together with the soy sauce and half of the sesame oil.
- Cut the asparagus into small pieces.
- Heat the remaining sesame oil and the vegetable oil in a wok, then fry the tofu cubes until brown.
- Add the asparagus bits and the mixed soy sauce and fry for a further 2-3 minutes.
- Add a dash of water, if it’s too dry.
- Stir in the sesame seeds and serve warm.
