Aubergine with lentils

Background
Aubergines cooked with lentils give a mild taste and are a very good combination with steamed rice or roti. This dish can be made with just one or two left over aubergines.
Ingredients
- ¼ cup Bengal gram dal (Chana dal)
- 2 Aubergines (Thin ones) or 1 Big Aubergine, chopped
- 1 Onion, chopped
- 1 Green chilli, chopped
- 1" Ginger, chopped
- ½ cup Water
- Salt as required
- 1 tsp Chilli powder
- 1 tsp Oil
- 1 tsp Turmeric
Instructions
- Pressure cook bengal gram dal with ½ cup water in pressure cooker according to your pressure cooker specifications and keep it aside.
- In a deep bottomed vessel, heat oil and add the onion, green chilli and ginger and fry until the onions are soft.
- Add the chopped aubergine and fry until they are cooked.
- Add the cooked bengal gram dal (and the water if left over from cooking in pressure cooker), salt and turmeric and simmer until all the water is evaporated.
- Serve hot with steamed rice.
