Background
This avocado, artichoke and tomato salad is It's ready in just a few minutes, it's healthy, light & tasty - so it's perfect Β for a lazy Summer lunch! Serve it with toasted pitta or tortilla.
Ingredients
- 1 avocado
- 1 large ripe tomato
- Β½ jar of artichokes in oil
- 1 shallot
- 1 lime
- 2 Tbsp chopped coriander or basil
Instructions
- Cut the avocado in half and remove the stone. Cut the flesh into little cubes.
- Dice the tomato.
- Drain the artichokes but keep the oil for the dressing.
- Finely slice the shallot.
- Mix the avocado, tomato, shallot and coriander in a serving dish. Drizzle with a Tbspful of the jar oil and squeeze some lime juice over the salad. Season with salt and pepper. Gently toss , taste and adjust the lime-oil-seasoning to your liking.
