Background
This avocado hummus is a delicious, healthy and vegan fusion dish - guacamole meets hummus. It’s rich and creamy , ideal dip for parties or healthy snacking, nut it can used as stuffing ( padron peppers or eggs etc) or as sandwich spread/filling.
Ingredients
- 1 small avocado
- 1 cup cooked chickpeas
- 2 spring onions, white part only, chopped
- 2 cloves of garlic, chopped
- 1 Tbsp tahini
- ½ tsp ground cumin
- 2 Tbsp chopped parsley or coriander leaves
- 1 or 2 Lime, juiced
- Salt &pepper
- Dash of tabasco (optional)
- Smoked Paprika and olive oil to garnish
Instructions
- Cut the avocado in half. Take out the pit and scoop out the flesh.
- Put all other ingredients in a food processor. Blend for a few seconds, then add the avocado. Pulse until you get the desired texture and thickness (add some water to thin it down - you can use the chickpea’ s cooking water).
- Taste it and adjust the seasoning, lime, tahini, tabasco to your liking.
- Transfer the hummus into a serving bowl, then garnish with paprika and chopped spring onions.
