Bagel with fried egg and sausage
Background
This bagel with fried egg and sausage is perfect for a laid-back weekend Β breakfast or brunch. Β I used spicy chorizo, but other, Italian -style paprika sausages are good too for the recipe. If dairy is not an issue for you, then add some grated cheese on top. The bagel can be gluten-free too.
Ingredients
- 2 bagels
- 6 cm piece cooking chorizo or similar paprika sausage
- 2 eggs
- 1 handful ripe baby tomatoes
- Balsamic glaze
- Red pesto
- Lettuce to serve
Instructions
- Cut the sausage into thin rings. Halve the tomatoes.
- Heat small spoonful of oil in a large frying pan and fry the sausage and tomatoes over low heat.
- Transfer them to a plate and keep warm under cover.
- Break the eggs into the pan and cook for 2-5 minutes according to your liking.
- Meanwhile, cut the bagels in half and lightly toast them in a toaster.
- Spread some pesto over the lower halves, then divide the tomato and sausage mixture between them.
- Put one egg on top of each bagel base, then garnish with balsamic glaze and serve with salad on the side.
