Baked cauliflower steaks with beans

Background
Baked cauliflower steaks are excellent for vegan or vegetarian meals. This Mexican-style baked cauliflower steaks with beans are healthy, a bit spicy and very yummy. Serve it with rice or tortilla chips and a crispy salad on the side. For a vegetarian version add some grated cheese for the lats 5 minutes of baking or a dollop of sour cream just before serving.
Ingredients
- 1 head cauliflower
- 1 tsp cumin seeds
- 1 pack cherry tomatoes on vine
- 1 tin black beans
- 1 red onion
- Lime juice and coriander leave to serve
- For the paste:
- 1 tsp smoked paprika
- Pinches of cayenne, to taste
- 2 pinches of cumin powder
- 1 tsp dried oregano
- 1 tsp tomato purée
- 1 tsp red wine vinegar
- 1 tsp lime juice
- 2 Tbsp olive oil
- 1 clove of garlic, minced
- Salt& pepper
Instructions
- Preheat the oven to 180°C.
- Remove the green leaves of the cauliflower. Rinse these and put them in a large roasting dish.
- Slice the onion and put these around the leaves.
- Cut the cauliflower into 4 thick steaks. Make the paste, then rub the cauliflower with this. Put them on top of the onion and leaves. Scatter the cumin seeds over everything then put the tomatoes around the steaks.
- Cover the dish with a lid or foil, then put it in the oven for 20 minutes.
- Take off the lid or foil and scatter the beans around the steaks. If the tomatoes haven’t released their juices, squash them with a fork and add a drop of water to the dish.
- Bake for another 5 minutes until tender. (For a veggie version you can add some grated cheese now).
- Serve with a squeeze of lime juice or a dollop of sour cream.
