Baked cauliflower with chickpeas

Background
If youβre after an interesting, spiced side dish to go with your roast or would like to have a delicious vegan meal, try this baked cauliflower with chickpeas! Itβs so easy to make and itβs so delicious yet filling! You can serve it with a dollop of yogurt or raita, if you like - I served it with brown basmati rice.
Ingredients
- 1 head of cauliflower
- 1 can chickpeas (400g)
- 2 onions
- 2 Tbsp oil or ghee
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala
- Β½ tsp turmeric
Instructions
- Preheat the oven to 180°C.
- Cut each onion into 4 wedges. Drain the chickpeas.
- Discard the outer, tough leaves of the cauliflower -set the tender ones aside.
- Tear or cut the cauliflower into florets, then place them into a large baking dish. Arrange the onion and the tender leaves between the florets, then scatter the chickpeas around them.
- Mix the oil with the spices, season with salt and pepper to your liking.
- Drizzle the oil mixture over the veggies and toss well.
- Bake for 35-45 minutes, until golden, stirring them a couple of times during thy cooking time.
- Serve warm.
