Baked Sea Bass with Rosemary & Garlic
Background
If you are nervous about cooking fish, this very simple but delicious recipe will help you gain confidence. Even if you're a dab hand with fish (no pun intended) you should try this Baked Sea Bass with Rosemary & Garlic method because it lets the wonderful flavour of the bass shine through in such an uncomplicated way.
Ingredients
- 2 medium sea bass (cleaned)
- Seasoning
- olive oil
- 4 garlic cloves, peeled & quartered
- 3 or 4 large sprigs of rosemary
Instructions
- Preheat the oven to 200C. Make two or three deep cuts into one side of each bass.
- Season the fish cavities, also the slits into which you then stuff the garlic and rosemary.
- Rub the oil & more seasoning all over the fish and also put some on the bottom of a suitably sized roasting dish then put in the bass with the cut sides up.
- Cook for 20-25 minutes in the oven, then take out and allow to rest for five minutes before serving sprinkled with lemon, olive oil & sea salt
Tips
This recipe also works very well with bream, which is rather less expensive.Categories
