Balsamic baked shiitake and tomatoes

Background
This balsamic baked shiitake and tomatoes can be reserved on a piece of sourdough as a light lunch (with a crispy salad on the side); or as a lovely side dish that goes well with steak, chicken or fish.
Ingredients
- 100g shiitake
- 1 handful of baby tomatoes on the vine
- 1 clove of garlic
- 2 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- 1 Tbsp soy sauce
- Ground pepper
- To serve: chopped fresh herbs of your choice (such as parsley, coriander, mint, chives etc.)
Instructions
- Preheat the oven to 180Β°C.
- Scatter the mushrooms and tomatoes into a baking dish.
- Add the minced garlic, balsamic viniger, oil and soy sauce. Season with pepper, then toss well.
- Bake for 15-20 minutes, until the mushrooms are tender and the tomatoes have softened.
- Serve with fresh herbs scattered on top.
