Balsamic baked tomatoes
Background
You can serve this balsamic baked tomatoes with grilled meat or fish or you could use it as pasta & stew base sauce (just whiz it up in a blender); or as pizza topping; or as stuffing in puff pastry pies and tartlets. It’s very easy to make and you can use other herbs such as thyme or dried oregano, marjoram etc. It's best to use really ripe tomatoes or you might need to add a pinch of sugar to the dish.
Ingredients
- 1 red onion
- 1 cup baby plum tomatoes
- 1 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 sprig rosemary, leaves only
- Salt & pepper
- 1 clove of garlic, minced
- Parsley to serve
Instructions
- Preheat the oven to 180°C.
- Cut the onion into thin wedges.
- In a small baking dish toss the tomatoes and onion wedges with the balsamic vinegar, oil, garlic and herbs. Season with salt & pepper. Roast for 20-25 minutes until tender.
- Serve warm or at room temperature.
