Balsamic baked tomatoes
Background
You can serve this balsamic baked tomatoes with grilled meat or fish or you could use it as pasta & stew base sauce (just whiz it up in a blender); or as pizza topping; or as stuffing in puff pastry pies and tartlets. Itβs very easy to make and you can use other herbs such as thyme or dried Β oregano, marjoram etc. It's best to use really ripe tomatoes or you might need to add a pinch of sugar to the dish.
Ingredients
- 1 red onion
- 1 cup baby plum tomatoes
- 1 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 sprig rosemary, leaves only
- Salt & pepper
- 1 clove of garlic, minced
- Parsley to serve
Instructions
- Preheat the oven to 180Β°C.
- Cut the onion into thin wedges.
- In a small baking dish toss the tomatoes and onion wedges with the balsamic vinegar, oil, garlic and herbs. Season with salt & pepper. Roast for 20-25 minutes until tender.
- Serve warm or at room temperature.
