Background
This tomato and avocado salad is super easy to make. Perfect for Summer garden parties, barbecues or as a filler in wraps and sandwiches. Or serve it as starter when you have guest over for dinner!
Ingredients
- About 6 ripe tomatoes on the vine
- ½ red onion
- 1 avocado
- 1 handful of mixed salad leaves
- 1 Tbsp extra virgin olive oil
- Dash of lemon juice
- For the dressing
- 1 Tbsp extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 1 garlic, minced
- Salt & pepper
Instructions
- Dice the tomatoes. Thinly slice the onion.
- Cut the avocado in half, remove its skin and the pit, then dice the flesh. Sprinkle with a dash of lemon juice.
- Scatter the salad leaves onto a platter. Arrange the tomato, onion and avocado pieces on top.
- Whisk the dressing together, then pour it over the salad.
- Toss and serve.
