Background

This tomato and avocado salad is super easy to make. Perfect for Summer garden parties, barbecues or as a filler in wraps and sandwiches. Or serve it as starter when you have guest over for dinner!

Ingredients

About 6 ripe tomatoes on the vine
½ red onion
1 avocado
1 handful of mixed salad leaves
1 Tbsp extra virgin olive oil
Dash of lemon juice
For the dressing
1 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar
1 garlic, minced
Salt & pepper

Instructions

Dice the tomatoes. Thinly slice the onion.
Cut the avocado in half, remove its skin and the pit, then dice the flesh. Sprinkle with a dash of lemon juice.
Scatter the salad leaves onto a platter. Arrange the tomato, onion and avocado pieces on top.
Whisk the dressing together, then pour it over the salad.
Toss and serve.
