
Background
This beet guacamole is an ideal condiment during the winter months. Itβs extremely healthy, tasty and easy to make. You can use homemade roasted beetroots or shop-bought cooked beets. Serve it wrapped in tortilla or as a dip with pita.
Ingredients
- 3 roasted or cooked beetroots
- 1 ripe tomato or 3 cherry tomatoes
- ½ red onion
- 2 tsp olive oil
- 2 ripe avocados
- 1 clove of garlic, minced
- Juice of 1 lime
- salt & pepper to taste
- 2 Tbsp chopped coriander
- Β½ tsp dried chilli flakes or 1 fresh chilli, deseeded & chopped
Instructions
- Finely chop the beet, tomato and onion. Put these in a bowl, season to taste and toss with the oil.
- Cut the avocado in half, remove the stone and scoop out the flesh into a bowl. Using a fork, mash the avocado flesh with the garlic and the lime juice. Season to taste.
- Gently toss the mashed avocado with the beet & tomato salsa, the chilli or chilli flakes and the chopped coriander.
- Taste and adjust seasoning.
