Ingredients: 3 roasted or cooked beetroots; 1 ripe tomato or 3 cherry tomatoes; ½ red onion; 2 tsp olive oil; 2 ripe avocados; 1 clove of garlic, minced; Juice of 1 lime; salt & pepper to taste; 2 Tbsp chopped coriander; ½ tsp dried chilli flakes or 1 fresh chilli, deseeded & chopped

Background

This beet guacamole is an ideal condiment during the winter months. It’s extremely healthy, tasty and easy to make. You can use homemade roasted beetroots or shop-bought cooked beets. Serve it wrapped in tortilla or as a dip with pita.

Ingredients

3 roasted or cooked beetroots
1 ripe tomato or 3 cherry tomatoes
½ red onion
2 tsp olive oil
2 ripe avocados
1 clove of garlic, minced
Juice of 1 lime
salt & pepper to taste
2 Tbsp chopped coriander
½ tsp dried chilli flakes or 1 fresh chilli, deseeded & chopped

Instructions

Finely chop the beet, tomato and onion. Put these in a bowl, season to taste and toss with the oil.
Cut the avocado in half, remove the stone and scoop out the flesh into a bowl. Using a fork, mash the avocado flesh with the garlic and the lime juice. Season to taste.
Gently toss the mashed avocado with the beet & tomato salsa, the chilli or chilli flakes and the chopped coriander.
Taste and adjust seasoning.
