Background
This Beetroot salsa with capers is so easy to make and goes really well with grilled steak or fish. Alternatively, it can be used as topping on party nibbles and appetisers - it's perfect with smoked fish & blinis! You can make it spicy by adding half a chilli to the mixture.
Ingredients
- 250g cooked beetroot (not pickled)
- 3 Tbsp capers in brine, drained
- 1 handful of flat leaf parsley
- 2 Tbsp balsamic vinegar
- 3 Tbsp of olive oil
Instructions
- Roughly chop the beetroot and add to a food processor. Add the remaining ingredients and whiz until you get a coarse paste.
- Season to taste and serve.
