Berry crumble cheat

Background
I think my ultimate favourite dessert is the crumble, particularly fruit's of the forest crumble with a crispy, healthy oaty topping. It’s relatively easy to make, but sometimes I'm just greedy and don’t have 25 minutes to wait for it, or I just want to make a single portion. So I came up with this Berry crumble cheat recipe which takes maximum ten minutes to make! I think it’s is important to use good quality granola - and the best ones are homemade with lots of nuts! You can use frozen berries too (which I do) - just defrost them in microwave or pour hot water over them to thaw.
Ingredients
- 1 cup of mixed berries (fresh or defrosted ones with their juices)
- juice of ½ lemon
- ¼ tsp cinnamon
- ½ tsp vanilla paste (optional)
- 4 Tbsp nutty granola
- To serve: Greek yoghurt or skyr
Instructions
- Put the berries in a sauce pan. If you’re using defrosted ones, add the juices too. Otherwise add a couple of spoonful of fruit juice or water. Add the lemon juice too.
- Bring to the boil. Add the cinnamon, vanilla paste and honey to taste. When the berries are soft and released their juices, let it bubble for a few seconds to thicken a bit.
- Spoon this in a bowl, scatter the nutty granola ( or granola and some nuts) on top.
- Serve with a dollop of yoghurt (perhaps mixed with some honey).
- Serve warm.
