Background
Bhatura is a fluffy deep fried leavened bread from north India and is often paired with a bowl of chickpea curry minced with raw onions and a lemon wedge, making the traditional dish chole bhature. The main ingredients are white flour, yoghurt, oil and baking soda. This recipe gained popularity as a street food in India.
Ingredients
- 4 cups all-purpose flour
- 1.5 cups plain curd
- 1 tsp baking powder
- 1.5 tsp baking soda
- 1 tsp sugar
- Salt to taste
- 4 cups oil for deep frying
Instructions
- Take a bowl and add the flour, baking powder, baking soda, salt, sugar. Mix well until combined.
- Add curd to this mixture little by little and kneed into a soft, smooth dough. You can add more or less curd as required but donβt add any water to the dough.
- Keep this dough covered with cling wrap or wet cloth for about 2 hours in a warm place.
- The dough will rise a bit and become more airy. Knead lightly and divide into lime sized portions.
- Dust the dough portions with flour generously and roll into circles.
- Heat oil in a deep bottomed pan until smoking and add the rolled bhature one by one.
- Fry until puffed up and golden specks appear on both the sides.
- Drain and set aside. Repeat until all the dough is used up.
- Serve hot with chickpea curry.
