Blueberry muffins

Background
Blueberries are my favourite of all the berries. These blueberry muffins are loved byΒ my daughter so I make them quite often for her. They are veryΒ simple and easy to make - and delicious too!
Ingredients
- 50g Butter
- 250g Self raising flour
- 1 tsp Baking powder
- 75g Caster sugar
- A pinch of salt
- 250g Plain yogurt
- 2 Large eggs (Lightly beaten)
- 250g Blueberries
Instructions
- Pre heat oven to 200Β°C. Line the tin with paper cases and set aside.
- Sift the flour into a large bowl. Add the baking powder, sugar and a pinch of salt. Make a well in the centre.
- Melt the butter in a small pan and set aside to cool.
- In a separate bowl, mix the yogurt, eggs and the cooled butter.
- Pour this into the dry ingredients along with the blueberries.
- Mix all the ingredients until just combined. It should not be over- mixed.
- Spoon the batter evenly into the cases. Bake them for 20 minutes or until risen and golden.
- Cool in the tin for 5 minutes. Serve warm or cool.
