Braised chicory and cod

Background
If you want a super easy, healthy and low-cal meal, do try out the recipe of this delicate braised chicory and cod! Itβs ready within 15 minutes, delicious and perfect for most diets! Serve it with brown rice, crusty bread, mashed vegetables or a crunchy green salad if youβre on weight-loss diet. Before serving, scatter some fresh herbs of your choice on top - Β I used parsley but basil, coriander, dill, mint, chives would also work.
Ingredients
- 2 cod fillets
- 2 small or 1 large head of chicory
- 1 bunch of spring onions (5
- 1 red chilli, deseeded
- 1 Tbsp salted capers (jarred)
- Zest of Β½ lemon
- Juice of 1 lemon
- Salt and pepper
- 2 Tbsp chopped herb of your choice ( dill, parsley, coriander, basil or chives)
Instructions
- Remove the base of the chicory, then thinly slice it. Finely chop the spring onions and chilli.
- Heat 1 Tbsp olive oil and gently sautΓ© the chopped vegetables and the capers (under over, over low heat) for about 5-6 minutes.
- When the chicory is tender, put the fish on top, then squeeze over the lemon juice and scatter the lemon zest over everything. Season with salt and pepper, then put on the lid, turn up the heat a bit and let the fish steam for about 5-8 minutes (depending on the thickness of the fillet).
- When the fish is cooked through, serve with the chopped herbs scattered on top.
