Braised red cabbage with apple

Background
Braised red cabbage with apple is a classic side dish to serve with roast pork and roast turkey. This dairy-free version is braised in cider, so it's perfect for special occasions and celebrations.
Ingredients
- Β½ medium red cabbage
- 1Tbsp olive oil
- 1 medium red onion
- 1 cinnamon stick
- ΒΌ tsp freshly grated nutmeg
- 1 bay leaf
- 100-150 ml cider
- 1 Tbsp cider vinegar
- 2 Tbsp cane sugar (soft & light)
- 1 apple
- Salt & pepper
Instructions
- Cut the cabbage in half. Remove the tough outer leaves and cut out the hard core. Finely slice or shred to give long strands.
- Heat the oil in a heavy-based saucepan and gently fry the onion until soft and translucent.
- Add the cabbage, stir through, then add the cinnamon, nutmeg & bay leaf followed by the cider, vinegar and sugar. Season to taste, stir well.
- Bring to a simmer and, under cover, cook for 15-20 minutes, stirring occasionally or until the cabbage is tender but still has a bit of crunchiness.
- Core and slice the apple, add to the cabbage; cook for a further 5-10 minutes until the apple is just softened.
- Taste, adjust seasoning. Serve warm.
Tips
I like braised cabbage cooked al dente, but if you prefer the cabbage (and the apple) very soft - cook for another 15-20 minutes.© 2024 Copyright CookTogether
