Brie and pea frittata

Background
This brie and pea frittata is perfect for a weekend brunch or lunch. AlternativelyΒ cut it up into little cubes and take them to picnic or serve them as tapas at a party.
Ingredients
- 1 Tbsp olive oil
- 4 spring onions
- 100g Brie cheese
- 100g peas
- 4 large eggs
- 1 small handful of mint leaves
Instructions
- Chop the spring onion and mint leaves.
- Beat the eggs slighly, then season and add the peas, spring onion & mint.
- Slice the cheese (including the rind).
- Turn on the grill.
- Heat the oil in a frying pan, pour in the egg mixture. Let it spread out evenly by tilting the pan. Cook for about 5 minutes.
- When the top of the egg mixture becomes slightly gelatinous, cover it with the cheese slices then grill it for about 4-5 minutes until the cheese melts and becomes golden brown.
