Background

This brie and pea frittata is perfect for a weekend brunch or lunch. Alternatively cut it up into little cubes and take them to picnic or serve them as tapas at a party.

Ingredients

1 Tbsp olive oil
4 spring onions
100g Brie cheese
100g peas
4 large eggs
1 small handful of mint leaves

Instructions

Chop the spring onion and mint leaves.
Beat the eggs slighly, then season and add the peas, spring onion & mint.
Slice the cheese (including the rind).
Turn on the grill.
Heat the oil in a frying pan, pour in the egg mixture. Let it spread out evenly by tilting the pan. Cook for about 5 minutes.
When the top of the egg mixture becomes slightly gelatinous, cover it with the cheese slices then grill it for about 4-5 minutes until the cheese melts and becomes golden brown.
