Broccoli, Leek and Celery Soup

Background
When you need something nourishing and warming but are also mindful of your calorie intake this Broccoli, Leek and Celery Soup is a great standby. Using a pressure cooker, it's ready in less than 20 minutes and is only about 65 kCals per portion!
Ingredients
- 5 oil spray squirts(5 kCal)
- 3 cloves of Garlic (13 kCal)
- 350g Leeks (77 kCal)
- 230g Celery (16 kCal)
- 280g Broccoli (92 kCal)
- 2 Kallo veg cubes (70 kCal)
- 1 litre Water (0 kCal)
Instructions
- Clean & roughly chop the vegetables. Peal and slice the garlic. Make up stock with cubes and boiling water.
- Squirt the oil into the pan over a medium flame
- Gently fry the garlic, then stir in the leek & celery and allow to sweat for a couple of minutes.
- Add the broccoli and stock, stirring well, then increase the heat, put on the lid and bring up to pressure.
- Pressure cook for 10 minutes, then allow to cool before removing the lid.
- Use a hand blender to smooth the soup.
Tips
If you don't have a pressure cooker, cut the vegetables much finer and simmer in a heavy-bottomed pan/casserole for about 30 minutes, stirring frequently.© 2026 Copyright CookTogether
