Butter beans with courgette

Background
The recipe of these butter beans with courgette is really easy and quick. It’s perfect on a piece of toast for a vegan lunch or you can serve as a side dish with grilled/fried meat & fish. I used dill which would complement salmon or mackerel but mint, parsley, chives, coriander, oregano would work with this dish too.
Ingredients
- 1 Tbsp olive oil
- 1 bunch of spring onions
- 2 cloves of garlic
- 2 pinches of chilli flakes (optional)
- 1 courgette
- 1 tin butter beans, drained
- Juice and zest of 1 lemon
- 2 Tbsp chopped fresh herbs (parsley, basil, coriander or dill)
Instructions
- Roughly chop the spring onions and garlic.
- Roughly grate the courgette.
- Heat the oil in a saucepan, then sauté the spring onions and garlic for 2 minutes, then add the courgette, chilli (if used) and lemon juice.
- Put a lid on and gently sauté for 5 minutes.
- Add the beans, then season with salt and pepper. Warm through, then fold in the herbs and serve.
