Cabbage and bacon stir-fry

Background
If you're looking for a quick and easy Chinese recipe - try this one! This cabbage and bacon stir-fry is an ideal dish as part of a Chinese dinner party menu, but you could also have it as a main with some rice for a no-fuss supper/lunch.
Ingredients
- 1 Tbsp peanut (groundnut) oil
- 1 red chilli
- 1 tsp Szechuan peppercorns, crushed
- 6 rashers of bacon
- 1 tsp Chinese rice wine (Shaoxing)
- 1 pointed cabbage (about 300g)
- 1 Tbsp rice vinegar (Chinese)
- Juice of 1 lime
- 1 tsp sesame oil
Instructions
- Cut the cabbage cut in half, then slice it into 1 cm wide, long strips.
- Dice the bacon into 1 cm cubes. Deseed the chilli then finely chop. Crush the peppercorn in a mortar.
- Heat a wok. Add the oil and, when it's smoky, stir-fry the chilli and peppercorn for a few seconds. Add the bacon pieces, stir-fry for about 2-3 minutes until crispy.
- Add the rice wine, stir-fry for 3-5 minutes. Turn off the heat, then stir in the rice vinegar, lime juice and oil.
- Season with salt to taste.
- Serve hot.
Tips
If you don't have Shaoxing wine you can use dry sherry.© 2024 Copyright CookTogether
