Background

If you're looking for a quick and easy Chinese recipe - try this one! This cabbage and bacon stir-fry is an ideal dish as part of a Chinese dinner party menu, but you could also have it as a main with some rice for a no-fuss supper/lunch.

Ingredients

1 Tbsp peanut (groundnut) oil
1 red chilli
1 tsp Szechuan peppercorns, crushed
6 rashers of bacon
1 tsp Chinese rice wine (Shaoxing)
1 pointed cabbage (about 300g)
1 Tbsp rice vinegar (Chinese)
Juice of 1 lime
1 tsp sesame oil

Instructions

Cut the cabbage cut in half, then slice it into 1 cm wide, long strips.
Dice the bacon into 1 cm cubes. Deseed the chilli then finely chop. Crush the peppercorn in a mortar.
Heat a wok. Add the oil and, when it's smoky, stir-fry the chilli and peppercorn for a few seconds. Add the bacon pieces, stir-fry for about 2-3 minutes until crispy.
Add the rice wine, stir-fry for 3-5 minutes. Turn off the heat, then stir in the rice vinegar, lime juice and oil.
Season with salt to taste.
Serve hot.

Tips

If you don't have Shaoxing wine you can use dry sherry.
