Background
This sweet potato and carrot mash is a lovely side dish to most roasted, grilled and stewed meat or fish. It's also very healthy and very good for toddlers and kids.
Ingredients
- 2 cloves of garlic
- 2 medium sweet potatoes
- 2 medium carrots
- 2 Tbsp chopped parsley or coriander
- Β½ cup hot vegetable stock
- 1or2 tsp olive oil
Instructions
- Peel the sweet potatoes and carrots, then cut into chunks.
- Put them into a saucepan, cover with water. Add the garlic and cook until the vegetables are soft.
- Drain then put back into the pan. Add half of the vegetable stock and oil. Blitz with a hand-held blender until smooth. Add more stock & oil if it's too thick.
- Add the herb (if used) and blend for a few more seconds.
- Serve warm.
