Background

This sweet potato and carrot mash is a lovely side dish to most roasted, grilled and stewed meat or fish. It's also very healthy and very good for toddlers and kids.

Ingredients

2 cloves of garlic
2 medium sweet potatoes
2 medium carrots
2 Tbsp chopped parsley or coriander
½ cup hot vegetable stock
1or2 tsp olive oil

Instructions

Peel the sweet potatoes and carrots, then cut into chunks.
Put them into a saucepan, cover with water. Add the garlic and cook until the vegetables are soft.
Drain then put back into the pan. Add half of the vegetable stock and oil. Blitz with a hand-held blender until smooth. Add more stock & oil if it's too thick.
Add the herb (if used) and blend for a few more seconds.
Serve warm.
