Background
This easy carrot slaw makes a perfect filling for sandwiches and wraps, or is an ideal salad for picnics & parties. You can also serve it with grilled fish & meat. It takes only a few minutes to make and keeps well in the fridge for a couple of days.
Ingredients
- 1 large carrot
- 1 Tbsp olive oil
- 1 Tbsp freshly squeezed lemon juice
- 1 Tbsp white wine vinegar
- ½ tsp Dijon mustard
- Pinch of chilli flakes
- 1 Tbsp chopped fresh parsley
- Salt and freshly ground black pepper
Instructions
- Shred the carrot using a food processor with a grating blade or just use a grater. Transfer the carrot to a serving dish.
- In a small bowl, whisk together the oil, lemon juice, vinegar, mustard and chilli flakes. Season to taste with salt & pepper.
- Toss the shredded carrots with the dressing and the parsley. Taste and adjust the seasoning & chilli.
- Chill until served.
