Background

This easy carrot slaw makes a perfect filling for sandwiches and wraps, or is an ideal salad for picnics & parties. You can also serve it with grilled fish & meat. It takes only a few minutes to make and keeps well in the fridge for a couple of days.

Ingredients

1 large carrot
1 Tbsp olive oil
1 Tbsp freshly squeezed lemon juice
1 Tbsp white wine vinegar
½ tsp Dijon mustard
Pinch of chilli flakes
1 Tbsp chopped fresh parsley
Salt and freshly ground black pepper

Instructions

Shred the carrot using a food processor with a grating blade or just use a grater. Transfer the carrot to a serving dish.
In a small bowl, whisk together the oil, lemon juice, vinegar, mustard and chilli flakes. Season to taste with salt & pepper.
Toss the shredded carrots with the dressing and the parsley. Taste and adjust the seasoning & chilli.
Chill until served.
