Background
This celeriac coleslaw goes superbly with grilled meat, burgers, spare ribs and so on. Itβs very easy to make - perfect for parties, picnics and barbecues too.
Ingredients
- Β½ celeriac
- 1 medium carrot
- 1 small onion
- Β½ cabbage ( white or red)
- 3 Tbsp low-fat natural yogurt
- 2 Tbsp light mayonnaise
- 1 Tbsp Dijon mustard
- 2 Tbsp chopped flat-leaf parsley
- 2 Tbsp mixed seeds (pumpkin and sunflower)
Instructions
- Peel and thinly slice or shred the celeriac, carrot and onion. Put them in a bowl.
- Mix the yogurt with the mayo and mustard. Season with salt and pepper.
- Let the salad rest for at least 30 minutes, 2 hours if time allows.
- Add the mayo mixture to the slaw together with the chopped parsley and the mixed seeds. Toss well.
- Chill the salad for at least 30 minutes before serving.
