Background
These Cheese & Onion Stuffed Mushrooms are very versatile. You can have them by themselves as a snack; as a starter for a dinner party; as party bonnes bouches; as a side dish or anything else you fancy. The stuffing ingredients can also be amended to suit your taste or dietary needs.
Ingredients
- 10 medium/large mushrooms
- Stuffing: 50g butter
- 50g cheese (e.g. cheddar)
- 2 cloves garlic (peeled)
- ½ red onion (peeled)
- 60g cooked rice
- 1 handful fresh herbs(e.g. parsley & coriander)
- the mushroom stalks
Instructions
- Preheat the oven to 180°C.
- Take the stalks from the mushrooms and mix with the other stuffing ingredients in a blender.
- Spoon the stuffing mixture into the mushrooms.
- Place the mushrooms on a lightly greased baking tray.
- Put into the oven and cook for about 10 minutes.
