Background

These Cheese & Onion Stuffed Mushrooms are very versatile. You can have them by themselves as a snack; as a starter for a dinner party; as party bonnes bouches; as a side dish or anything else you fancy. The stuffing ingredients can also be amended to suit your taste or dietary needs.

Ingredients

10 medium/large mushrooms
Stuffing: 50g butter
50g cheese (e.g. cheddar)
2 cloves garlic (peeled)
½ red onion (peeled)
60g cooked rice
1 handful fresh herbs(e.g. parsley & coriander)
the mushroom stalks

Instructions

Preheat the oven to 180°C.
Take the stalks from the mushrooms and mix with the other stuffing ingredients in a blender.
Spoon the stuffing mixture into the mushrooms.
Place the mushrooms on a lightly greased baking tray.
Put into the oven and cook for about 10 minutes.
