Cheese and spring onion omelette

Background
If you only have ten minutes in which to magic up a delicious meal, do try this cheese and spring onion omelette recipe! Itβs super easy to make, perfect on lazy weekends or busy weekday evenings. Serve with a green salad and/or some crusty bread.
Ingredients
- 3 medium or 2 large eggs
- 2 spring onions
- 2 pinch of chilli flakes or ½ red chilli
- ½ cup grated cheese
- 1 Tbsp olive oil
Instructions
- Lightly whisk the eggs in a bowl. Season with salt and pepper.
- Finely chop the spring onions and chilli. Grate the cheese and set aside.
- Heat the oil in a small frying pan. Add the spring onion and chilli and fry for a few seconds.
- Add the egg mixture, letting it spread out. Cook for about 5 minutes until the egg is almost set.
- Sprinkle over the cheese, then carefully fold the omelette with a spatula. Let the cheese melt completely then serve immediately.
