Cheesy chorizo and mushroom fry
Background
This cheesy chorizo and mushroom fry can be served as a vegetarian meal ( with mashed potatoes, paste, rice or on a piece of toast); or as a side dish ( with grilled chicken, beef or pork). Itβs super easy to makeΒ -Β you can use any blue cheese you like, I made it with Gorgonzola.
Ingredients
- 1 onion
- 50g spicy chorizo, skinned
- Β½ yellow or red bell pepper
- 150g chestnut mushrooms
- Β½ tsp dried marjoram or oregano
- 1 Tbsp red wine vinegar
- 50g blue cheese (stilton, gorgonzola etc)
- 1 handful parsley
Instructions
- Roughly chop the onion and chorizo. Heat a frying pan over low heat and add these to the pan. The sausage will release its fat which will be enough to soften the onion.
- Meantime, thinly slice the mushrooms and chop the bell pepper.
- When the onion has softened, add the pepper and mushroom. Scatter the oregano on top and stir-fry for a minute.
- Add the red wine vinegar, put a lid on and gently sautΓ© for about 10 minutes - you might need to add a splash of water.
- Crumble the blue cheese over the mushrooms and add the chopped herbs. Stir for a minute until the cheese has melted.
- Season to taste and serve immediately.
