Background
Chickpeas with chorizo is a typical dish you get in a Tapas restaurant or bar. It’s so easy to make at home too - either for guests or just for yourself on a lazy weekend evening! Don’t forget some Cava or Sangria!
Ingredients
- 250g Chorizo Cooking Sausage
- 1 medium onion
- 2 celery sticks
- 2 cloves of garlic
- 100ml dry white wine
- 1 can chopped tomatoes
- 2 cans chickpeas, drained
- Salt, pepper, parsley leaves
Instructions
- Slice the chorizo, finely chop the onions, garlic and celery.
- In a heavy-based saucepan, fry the chorizo until it releases its fat, then add the chopped vegetables. Gently sauté everything until tender.
- Add the wine, tinned tomatoes and cook for about 15 minutes until you get a thick sauce.
- Add the drained chickpeas to the sauce. Cook for about 10 minutes, under cover, until there is very little sauce left. Season with salt &pepper.
- Scatter chopped parsley on top and serve.
