Chilli & garlic mushrooms

Background
This is a classic dish that most Tapas restaurants serve. It's really quick and easy to make and could be a zesty side dish in a Sunday lunch menu or for a midweek supper. AlsoΒ it's ideal for drink parties, BBQs or you can take it with you to a picnic.
Ingredients
- 40 ml of olive oil
- I knob of butter (optional)
- 3 cloves of garlic (minced)
- 1 small red chilli (seeded)
- 500g button mushroom
- 1 tsp fresh lemon juice
- 1 Tbsp chopped parsley
Instructions
- Heat the oil and butter in a frying pan. Add the garlic and chilli, stir.
- After a minute or so add the mushrooms. Cook for about 5 minutes until tender.
- Stir in the freshly squeezed lemon juice and parsley.
- Serve warm as a side dish or at room temperature as tapas (with cocktail sticks).
